A Winter Morning Tea with Egg n Cheese Pillows

Dear Rinki,

The barometer has been reading 14 degree C…its such a pain getting up in the morning, I just feel like burrowing deep into the quilt and hibernating till spring knocks on my window. Its not that I don’t love winters, I do. Especially now that the flowers are in bloom and there  is early morning fog…that’s a favorite. A foggy morning, with next to zero visibility, and streams of smoke enveloping each spoken word, never fails to transforms me back to childhood. Suddenly I am five again, walking to school with ma, holding her hand, and feeling transported to a strange land where around the next invisible corner, something magical waited to be discovered. I have never been able to shake that feeling for a more prosaic one, maybe I never wished to.

Yes winter mornings are definitely special, sans the early morning tiffin making of course! But Thursday was special, it was Ma’s birthday. Wanted to surprise her with a special something to accompany her morning cup of tea which she relishes. So I made these soft pillowy buns stuffed with cheese and eggs. The perfect savory snack to go with her Morning Cuppa.

Egg n Cheese Pillows


Bread Dough ( See Homemade Bread Recipe)

1 Capsicum( Bell Pepper) finely Diced

1 Large Onion Finely Diced

2 Hard Boiled Eggs Chopped

1 Bunch coriander Leaves Chopped

1/2 cup Cheese Grated

Tomato Ketchup


Pepper powder

Handful of Chopped Peanuts

Sesame and Melon seeds

1 Egg Beaten

Make dough, the night before and leave for proofing overnight.

To make the filling mix the onions, capsicum, eggs, cheese, peanuts, coriander, salt , pepper, ketchup in a bowl and keep aside.

Divide the dough into small balls and roll into 4-5 inch sized discs.

Spoon a heap of the filling onto the centre of the disc. Pull sides together and pinch in the centre, stick the four arms together to form a pillow shape( See slideshow)

Sprinkle with Sesame and Melon seeds

Brush with egg

Bake in a pre-heated oven at 250 degree C, for fifteen to twenty minutes.

Serve hot with tea or coffee.

For a vegetarian option just forgo the eggs, and increase the cheese. There is no such thing as too much cheese! And brush with a honey and milk mix.

Its needless to say how much she enjoyed the little snack. and possibly Riz enjoyed it even more because he not only polished off a few for breakfast but carried the same for his tiffin..with the little homily.. “ma you should make this everyday!”
